To make this savory dish, you will need:
- 3/4 Cup of honey
- 3/4 Cup of Chipotle peppers in Adobo sauce
- 1/3 Cup of rice wine vinegar
- 1/3 Cup of pineapple juice
- 1/2 Teaspoon of garlic salt
- 1/2 Teaspoon of hot pepper sauce
- 1 1/2 Pounds of chicken wings
- 1/4 Cup of coarsely chopped cilantro (optional)
- 4 Stalks of celery (optional)
- 4 carrots cubed (optional)
We are going to go through this process step-by-step, to ensure even coating of the ingredients. This will ensure even cooking. It will also guarantee the flavor will be consistent in every bite throughout the Buffalo wings.
First, you will need to pre-heat your oven to 350 degrees.
Next, you are going to rinse off your chicken wings under some cool water, then drain the excess water off thoroughly. Place your chicken into a mixing container of your choice. Make sure the container is large enough to hold all of the chicken, the ingredients and is able to be mixed around well.
After your chicken has been placed into the container and all excess moisture has been removed from the chicken, add the rice wine vinegar and chipotle peppers in Adobo sauce. Coat the chicken thoroughly. Use your clean, dry hands to mix the chicken around, completely coating the chicken with the rice wine vinegar and chipotle peppers in Adobo sauce evenly.
Combine the Honey and garlic salt with the chicken, rice wine vinegar and Chipotle pepper in Adobo sauce mix. By adding the honey after the rice wine vinegar, the honey does not break down so fast allowing for a thicker coating on the wings. Again, use your hands to coat the honey and garlic salt evenly over the chicken. Massage the ingredients into the chicken wings coarsely.
Now, add the pineapple juice and the hot pepper sauce. Continue to massage all of the ingredients into the Buffalo chicken wings evenly and consistently, ensuring the the ingredients are coating each wing completely.
Once the previous steps have been completed, cover the chicken and marinate for anywhere from 1-4 hours. This will ensure that the sweet and spicy sauce absorbs into the meat as much as possible. The longer you marinate the Buffalo chicken wings, the deeper the sauce and subsequently, the flavor will absorb. Remember, the longer you marinate, the more intense the flavor. The shorter means least intense. You can also add more hot pepper sauce if you like your wings a little spicier. You may also add a little bit more honey if you like your wings a little bit sweeter.
You will now need a cookie sheet, preferably non-stick. If not, spray a little bit of non-stick cooking spray onto the cookie sheet to prevent the chicken from sticking, and the sauce from burning to it. Place the chicken onto the cookie sheet and spread the chicken out evenly, reserving some of the sauce until the end to cover over the chicken prior to it going into the oven to bake.
Bake the Buffalo chicken wings for 25 minutes. Remove your wings from the oven and place onto a serving dish. You can garnish your wings with a little bit of chopped cilantro by coarsely chopping some cilantro and generously sprinkling it over top.
